In a bowl, combine ginger, garlic, white parts of green onion, honey, dark soy sauce, low-sodium soy sauce, sesame oil, Chinese 5 Spice Powder, and sambal oelek (if using). Mix well.

Add chicken thighs to marinade, ensuring they are fully coated. Marinate for at least 30 minutes (or up to 2 hours).

Preheat air fryer to 400°F (200°C). Place chicken skin-side down in basket. Cook 15–20 minutes, flipping halfway, until 165°F (74°C).

Preheat oven to 425°F (220°C). Place chicken on baking sheet or in skillet. Bake 25–30 minutes, flipping halfway, until 165°F (74°C).

Garnish chicken with green parts of green onions. Serve hot with rice, noodles, or sides.
