Get a baking sheet ready by covering it with wax or parchment paper. Leave it aside for later.

Add the apricots, two cups of shredded coconut, walnuts, and condensed milk to the food processor. Blend it all until evenly mixed, which should take about 30–60 seconds.

Form 1-inch balls from the mixture. Coat them by rolling in the leftover cup of coconut. You can roll them in powdered sugar instead, if you'd rather.

Enjoy the coconut apricot balls right away, or store them in a sealed container in the fridge. They'll stay good there for about a week.
