05 - 2 g cinnamon, ground (1/2 teaspoon)

→ Dough Handling

06 - 2–3 teaspoons (10–15 ml) melted coconut oil for kneading, just add as needed

→ To Finish

07 - Avocado oil spray for the dough balls and air fryer basket

# Instructions:

01 - Dig in while they're still warm for the best bite and texture.
02 - Right after air frying, brush them with melted coconut oil. Roll those warm balls in the cinnamon-sugar so they’re fully covered.
03 - Turn your air fryer to 180°C (350°F). Pop the dough balls in for about 6 to 7 minutes, or until you see them puff up and turn a lovely golden brown.
04 - Give the air fryer basket a spritz with avocado oil. Lay your dough balls in the basket, leaving space—about an inch—between each.
05 - Get your hands greased with coconut oil. Grab a tablespoon of dough at a time, roll them into balls, and set them on a plate lined with parchment. Spritz each one with a bit of avocado oil spray.
06 - Use oiled hands to knead the dough right in the bowl until it’s stretchy and slightly sticky. Don’t toss in extra flour unless the dough’s too wet; if it is, max 2–3 teaspoons will do.
07 - Dump the self-rising flour onto your mashed banana. Give everything a gentle stir with a spatula until it starts to clump.
08 - Smash up your banana super smooth. Make sure it comes to 1/2 cup (or 120 ml) for the right dough feel.

# Notes:

01 - If you don’t want dry or tough bites, don’t go wild with flour. Just oil your hands and maybe the table so things don’t stick.
02 - These are tastiest fresh, but they'll keep in a sealed container on your counter for a couple days if needed.
