Spinach Artichoke Bean (Print Version)

# Ingredients:

01 - 1 can (15 oz) cannellini beans, rinsed well and drained
02 - 1 can (15 oz) garbanzo beans, rinsed well and drained
03 - 1 can (15 oz) artichokes, chopped after draining
04 - 1 cup finely chopped spinach
05 - 1/3 cup diced green onions
06 - 1/2 cup plain Greek yogurt
07 - 1/4 cup mayo
08 - 1/2 cup shredded parmesan cheese
09 - 1 clove garlic, finely chopped or crushed
10 - 1 tsp of Italian herb blend
11 - 1/2 tsp grated lemon skin (zest)
12 - 1/2 tsp of salt

# Instructions:

01 - In a large mixing bowl, toss together the rinsed beans, artichokes, spinach, and green onions until blended.
02 - Grab a smaller bowl and stir together the Greek yogurt, mayo, parmesan cheese, garlic, herbs, lemon zest, and salt. Add a tablespoon of water if needed to make it smooth.
03 - Pour the prepared dressing over the bowl of beans and veggies. Mix it all up until every bite's coated well.
04 - Store in a sealed container in the fridge, and it'll stay good for up to a week.
