Cheesy Beef and Fries (Print Version)

# Ingredients:

→ Filling

01 - 1 pound of ground beef
02 - 1 tablespoon of olive oil
03 - 1 small diced onion
04 - 2 minced garlic cloves
05 - 1 teaspoon of cumin
06 - 1 teaspoon of chili seasoning
07 - 1 teaspoon of smoked paprika
08 - 1/2 teaspoon of salt
09 - 1/2 teaspoon of ground black pepper
10 - Half a cup of salsa
11 - 1 cup of shredded Monterey Jack
12 - 1 cup of shredded cheddar

→ Assembly

13 - 6 big flour tortillas
14 - 1/2 cup of sour cream
15 - Chopped lettuce, 1/2 cup
16 - Diced tomatoes, 1/2 cup
17 - Optional: 1/4 cup of fresh cilantro cut up

→ Fries

18 - 4 medium-size russet potatoes
19 - 2 tablespoons of olive oil
20 - 1 teaspoon of garlic seasoning
21 - 1 teaspoon of paprika
22 - 1/2 teaspoon of salt
23 - 1/2 teaspoon of pepper

# Instructions:

01 - Rinse off the potatoes, and if you want, peel them. Slice into even fry pieces. Let the fries sit in a bowl of chilled water for 30 minutes to pull out extra starch.
02 - Set the oven to 220°C or heat oil to 190°C for deep frying. Dry the soaked fries, toss with olive oil, garlic seasoning, paprika, salt, and pepper. Lay them on a baking pan or fry in batches. Bake for 25–30 minutes, flipping halfway, or fry until crispy and brown.
03 - In a skillet, heat oil on medium flame. Add the chopped onions and cook until soft. Add in the garlic and stir for a minute. Brown the beef, breaking it apart as it cooks, and drain the fat. Sprinkle on the spices—cumin, smoked paprika, chili powder, salt, and black pepper. Mix it all up. Pour in the salsa and simmer for 5 minutes.
04 - Make the tortillas more bendable by warming them. On each one, slather some sour cream in the middle. Pile on the meat mix, both types of cheese, lettuce, tomatoes, and a sprinkle of cilantro if you like. Fold the sides inward and roll tightly to close.
05 - Serve the rolled tortillas alongside a pile of fries. Add extras like guacamole, more grated cheese, or jalapeños. Dip the fries in ketchup or another sauce.
