Berry Oatmeal Bars (Print Version)

# Ingredients:

01 - 2 tablespoons maple syrup
02 - 2 tablespoons coconut sugar
03 - Pinch of sea salt
04 - 2 cups frozen mixed berries
05 - 1.5 tablespoons tapioca starch (also called tapioca flour)
06 - 1 tablespoon lemon juice

07 - 0.33 cup coconut oil (solid when room temperature)
08 - 1.75 cups rolled oats (can be gluten-free)
09 - 0.5 teaspoon baking soda
10 - 1.25 cups almond flour (blanched)
11 - 0.5 teaspoon pure vanilla extract
12 - 0.5 cup maple syrup
13 - 0.125 teaspoon sea salt

# Instructions:

01 - Turn your oven to 375°F (190°C) and get a 9x9-inch baking dish ready by lining it with parchment.
02 - Take your frozen berries and remove any large ones, like strawberries, or chop them smaller if needed. Toss them into a small saucepan with lemon juice, coconut sugar, maple syrup, and a pinch of salt. Gently heat on low to medium for 5-10 minutes till the berries release juice and get soupy. Take a small amount of the juice (about 1-2 tablespoons), mix it with tapioca starch in a separate cup, and stir until smooth. Add this back to the saucepan, heat another minute, and then take the pan off the burner. Let it sit aside.
03 - Use a big bowl to combine almond flour, oats, sea salt, and baking soda. Pour in the maple syrup, coconut oil, and vanilla extract. Start stirring with a fork, and if you need to, use hands to mix everything thoroughly.
04 - Scoop out 0.5-0.75 cups of your oat mixture and set that extra aside for later. With the rest, press it down in your dish to create an even base layer. Spread your cooked berry filling on top of this base. Take the oat mix you kept aside, break it into chunks, and sprinkle it all over the berries.
05 - Pop the dish into the oven and bake for 20-25 minutes till the edges start to brown a little. Let everything cool completely before chopping it into pieces so it holds together nicely. You can keep it lightly covered in the fridge for days of snacking.

# Notes:

01 - Let these cool entirely first if you want them to hold their shape when slicing.
02 - It's fine to use different small frozen berries, just make sure larger ones are cut into smaller bits.
