Place tortillas on a plate. Wet a couple of paper towels and lay one on each tortilla. Microwave for 20 seconds until soft.

Over medium-low heat, stir in spices (paprika, cumin, salt, and pepper) and mix with the filling. Sprinkle cheese on top, mixing until melted.

Chop spinach roughly and toss into the pan. Cook for another minute or two.

Heat up the olive oil on medium while you toss in the garlic and onion. Stir and cook for a minute before moving forward.

Throw in the beans and corn to your pan. Stir it all together as it cooks for five or six minutes.

On a plate or board, lay down a tortilla. Scoop two or three big spoonfuls of filling into the center, spreading it out a bit.

Fold each side inward over the filling, then roll the bottom edge up and over it. Keep those folded edges tucked in as you roll the rest tightly.
