Black Bean Spinach Wraps (Print Version)

01 - 2 large flour tortillas
02 - 1 cup onion, finely chopped
03 - 1 tablespoon olive oil
04 - 1 teaspoon cumin
05 - 1/2 teaspoon kosher salt
06 - 1/8 teaspoon ground black pepper
07 - 1 teaspoon paprika
08 - 2 cloves garlic, minced
09 - 1 1/2 cups fresh spinach (roughly 2-3 oz)
10 - 1 1/4 to 1 1/2 cups shredded cheese (cheddar, pepper jack, or both)
11 - 1 1/2 cups black beans or one drained can
12 - 1 1/2 cups corn kernels or one drained can

# Instructions:

01 - Place tortillas on a plate. Wet a couple of paper towels and lay one on each tortilla. Microwave for 20 seconds until soft.
02 - Over medium-low heat, stir in spices (paprika, cumin, salt, and pepper) and mix with the filling. Sprinkle cheese on top, mixing until melted.
03 - Chop spinach roughly and toss into the pan. Cook for another minute or two.
04 - Heat up the olive oil on medium while you toss in the garlic and onion. Stir and cook for a minute before moving forward.
05 - Throw in the beans and corn to your pan. Stir it all together as it cooks for five or six minutes.
06 - On a plate or board, lay down a tortilla. Scoop two or three big spoonfuls of filling into the center, spreading it out a bit.
07 - Fold each side inward over the filling, then roll the bottom edge up and over it. Keep those folded edges tucked in as you roll the rest tightly.
08 - Pair with your go-to toppings like hot sauce, lime, or salsa. It's all up to you!

# Notes:

01 - These wraps are great for meal prep. Get the filling ready (skip adding cheese), let it cool, mix in cheese, then stuff and roll your tortillas. Wrap tightly in plastic, then foil, and freeze for up to 2-3 months.
02 - To heat in the microwave: unwrap and microwave for 6-7 minutes, flipping halfway through. Finish by crisping it in a hot pan if you'd like.
03 - Reheat in the oven by unwrapping it, placing it on a baking tray, and baking for 45 minutes at 400°F.
04 - Frozen spinach works perfectly too—just thaw it and wring out the water using a clean towel.
05 - You can throw in leftover meat like chicken, pork, or beef to make this heartier.
