Turn on your oven and set it to 400°F (200°C).

Dust a surface with flour, then roll out the puff pastry into a rectangle about 15 x 10 inches (38 x 25 cm).

Place your flattened pastry onto a parchment-lined baking tray.

Spoon the fig jam evenly across the center of the pastry.

Arrange the brie slices over the layer of fig jam.

Slice two-inch (5 cm) strips on either side of the pastry about one inch (2.5 cm) apart, keeping the middle part intact for your filling.

Fold the top part of the pastry down, then overlap the strips over your filling tightly like a braid, sealing it well to keep everything inside.

Mix together the egg and a tablespoon of water in a small dish.

Generously paint the egg wash all over your braided pastry.

Sprinkle salt and fresh thyme over the top.

Pop it into your preheated oven and bake for about 20-25 minutes, until it puffs up and turns golden brown.

Once it’s out of the oven, let it cool off a little before serving. You can top with fresh apple or pear slices if you want.
