Brie Thyme Fig Pastry (Print Version)

# Ingredients:

01 - 1 egg
02 - 1 tablespoon water
03 - Fresh thyme
04 - Fresh pear or apple slices for garnish, optional
05 - 1 sheet of puff pastry, thawed
06 - 1/2 to 3/4 cup fig jam
07 - 1 8-9 oz brie cheese wheel, rind off and sliced
08 - Kosher salt or finishing salt

# Instructions:

01 - Turn on your oven and set it to 400°F (200°C).
02 - Dust a surface with flour, then roll out the puff pastry into a rectangle about 15 x 10 inches (38 x 25 cm).
03 - Place your flattened pastry onto a parchment-lined baking tray.
04 - Spoon the fig jam evenly across the center of the pastry.
05 - Arrange the brie slices over the layer of fig jam.
06 - Slice two-inch (5 cm) strips on either side of the pastry about one inch (2.5 cm) apart, keeping the middle part intact for your filling.
07 - Fold the top part of the pastry down, then overlap the strips over your filling tightly like a braid, sealing it well to keep everything inside.
08 - Mix together the egg and a tablespoon of water in a small dish.
09 - Generously paint the egg wash all over your braided pastry.
10 - Sprinkle salt and fresh thyme over the top.
11 - Pop it into your preheated oven and bake for about 20-25 minutes, until it puffs up and turns golden brown.
12 - Once it’s out of the oven, let it cool off a little before serving. You can top with fresh apple or pear slices if you want.
