Caramel Banana Pudding Parfaits (Print Version)

# Ingredients:

01 - 1 cup brown sugar, packed
02 - 1/2 cup unsalted butter
03 - 1/2 cup heavy cream
04 - 1 teaspoon vanilla extract
05 - Pinch of salt

→ Banana Pudding

06 - 2 cups whole milk
07 - 1/2 cup granulated sugar
08 - 2 large eggs
09 - 1 teaspoon vanilla extract
10 - 2 tablespoons cornstarch
11 - 1/4 teaspoon salt
12 - 1 tablespoon unsalted butter

→ Assembling Parfaits

13 - 4 ripe bananas, sliced
14 - 1 package vanilla wafers (30-40 cookies)
15 - Whipped cream, for topping
16 - Additional caramel sauce, for drizzling
17 - Fresh mint leaves (optional, for garnish)

# Instructions:

01 - Combine brown sugar, butter, and heavy cream in a saucepan. Cook over medium heat, stirring occasionally. Once melted and dissolved, simmer 5-7 minutes until thickened. Remove from heat; stir in vanilla and salt. Cool slightly.
02 - Whisk milk, sugar, eggs, cornstarch, and salt in a saucepan. Cook over medium heat, whisking constantly, until thickened and just begins to boil (7-10 minutes). Remove from heat; stir in butter and vanilla. Cool slightly.
03 - In jars/glasses, place caramel sauce at bottom. Layer banana pudding, banana slices, and vanilla wafers. Repeat layers. Top with whipped cream and caramel drizzle. Chill for 2 hours.
