Cheesy Egg Veggie Bake (Print Version)

# Ingredients:

01 - 1/4 teaspoon black pepper
02 - 1/2 teaspoon salt
03 - 6 large eggs
04 - 1/2 cup diced bell pepper
05 - 1 cup chopped spinach
06 - 1/2 teaspoon onion powder
07 - 1/2 cup chopped onion
08 - Fresh herbs for topping (optional)
09 - 1/2 teaspoon garlic powder
10 - Sliced avocado or tomatoes for garnish (optional)
11 - 2 cups cottage cheese
12 - 1 cup shredded cheese

# Instructions:

01 - Set your oven to 350°F (175°C) and grease a square 9x9 pan.
02 - Crack the eggs into a big bowl and beat them. Add the cottage cheese and mix until smooth.
03 - Toss in the spinach, bell pepper, onion, garlic powder, onion powder, black pepper, and salt. Stir until everything's spread out.
04 - Stir in the shredded cheese, but save a little to sprinkle on top if you like. Pour it all into the pan, smoothing it out.
05 - Pop it in the oven and bake for 40-45 minutes, until the top is golden and the center isn’t jiggly. Rest for 5 minutes before cutting.
06 - If you want, top it with fresh herbs, or slices of avocado or tomato before serving.

# Notes:

01 - Both regular and low-fat cottage cheese work well here.
02 - It’s great for meal prepping and keeps for a few days.
03 - Swap in your favorite veggies if you want something different.
