Combine mayo, Dijon mustard, shredded chicken, and a sprinkle of salt and pepper in a bowl.

Lay one slice of garlic bread flat. Add the chicken mix, followed by mozzarella and Parmesan on top.

Put the second garlic bread slice on top. Cook in a skillet over medium, flipping until the cheese melts and the bread looks golden — about 4–5 minutes a side.
