Chicken Salad Cheese (Print Version)

# Ingredients:

→ Base for Chicken Salad

01 - 2 tablespoons thinly sliced green onion
02 - 1 cup of shredded rotisserie chicken, chopped small
03 - ¼ cup diced red onion
04 - ¼ cup diced celery stalks
05 - ¼ cup chopped banana peppers (mild or hot) from a jar
06 - ½ cup smooth, blended low-fat cottage cheese (2% milkfat)

→ Flavor Boosters

07 - ¼ teaspoon each of salt and pepper
08 - ½ teaspoon garlic powder
09 - ½ teaspoon Dijon mustard or spicy mustard

# Instructions:

01 - Blend the cottage cheese, mustard, garlic powder, salt, and pepper in a food processor until it's creamy.
02 - In a big mixing bowl, toss the blended cottage cheese mixture with the chicken, banana peppers, celery, red onion, and green onion. Stir until all ingredients are mixed well.
03 - Give the salad a taste, and if it needs more salt or pepper, add as needed. Eat right away or let it chill in the fridge until you're ready.
