Put parchment paper on a baking sheet and set it aside.

Beat the butter and brown sugar together in a mixing bowl until it’s nice and creamy.

Add the vanilla and egg, then mix until everything’s smooth.

Blend the cottage cheese until the texture is completely smooth using a blender or food processor.

Pour the blended cottage cheese into the bowl and stir it into the butter mixture.

Stir in the almond flour and baking powder until you’ve got a soft dough.

Carefully work the chocolate chips into the dough with a spatula or spoon.

Turn your oven on to 350°F (175°C) and let it preheat.

Scoop out small balls of dough using a cookie scoop and place them on the lined baking sheet.

Let the cookies bake for around 10–12 minutes until the edges turn light brown.
