Cottage Cheese Cookies (Print Version)

# Ingredients:

01 - 1/2 cup chocolate chips
02 - 1 teaspoon baking powder
03 - 1 1/4 cups almond flour
04 - 1 teaspoon pure vanilla extract
05 - 1/2 cup 2% cottage cheese
06 - 1 large egg
07 - 1/3 cup brown sugar
08 - 1/4 cup softened butter

# Instructions:

01 - Put parchment paper on a baking sheet and set it aside.
02 - Beat the butter and brown sugar together in a mixing bowl until it’s nice and creamy.
03 - Add the vanilla and egg, then mix until everything’s smooth.
04 - Blend the cottage cheese until the texture is completely smooth using a blender or food processor.
05 - Pour the blended cottage cheese into the bowl and stir it into the butter mixture.
06 - Stir in the almond flour and baking powder until you’ve got a soft dough.
07 - Carefully work the chocolate chips into the dough with a spatula or spoon.
08 - Turn your oven on to 350°F (175°C) and let it preheat.
09 - Scoop out small balls of dough using a cookie scoop and place them on the lined baking sheet.
10 - Let the cookies bake for around 10–12 minutes until the edges turn light brown.
11 - Move the cookies to a wire rack to cool off before enjoying them.
