Mint Chocolate Chip Balls (Print Version)

# Ingredients:

→ Mix-ins

01 - 40 g tiny dark chocolate chips

→ Wet Ingredients

02 - 0.25 tsp peppermint extract
03 - 42 g honey
04 - 240 g almond butter
05 - 15-30 ml unsweetened almond milk, use only if you need to loosen the mix

→ Dry Ingredients

06 - 30 g vanilla protein powder
07 - 50 g rolled oats

# Instructions:

01 - Once chilled, pack up the bites in a sealed container and stash them in the fridge. They'll keep well for about a week.
02 - Pop the rolled balls onto a baking sheet lined with parchment. Let them firm up in the fridge for at least 20 minutes.
03 - Scoop out tablespoons of the mixture. Roll each one between your hands to make balls. Keep going till you’ve used it all.
04 - Toss in the dark chips and gently stir them in so every bite gets some chocolate.
05 - If things look a bit dry, trickle in some almond milk, just a spoonful each time, till the mix holds together well.
06 - Start by dumping the oats, protein powder, almond butter, honey, and peppermint extract into a big bowl. Stir it up until everything comes together smoothly.

# Notes:

01 - If you want these vegan, swap the honey for maple syrup instead.
02 - Sticky situation? Let the mixture chill 5-10 minutes and it's easier to roll.
03 - Dial back or bump up the peppermint, based on what tastes good to you.
04 - Add chia or flax seeds if you want more fibre and protein in each bite.
