Warm Cider Cinnamon Bread (Print Version)

# Ingredients:

→ For the bread

01 - 1 large egg
02 - ½ teaspoon salt
03 - 2 cups flour
04 - 1 cup brown sugar
05 - 2 cups apple cider
06 - ½ teaspoon baking soda
07 - 1 tablespoon apple pie spice
08 - 1 teaspoon vanilla
09 - 1 teaspoon baking powder
10 - ½ cup butter, softened

→ For the topping

11 - ½ cup sugar
12 - ¼ cup melted butter
13 - 1 tablespoon cinnamon

# Instructions:

01 - Pour the cider into a pot and kick the heat up to medium. When it starts boiling, drop it to a simmer and cook it down by half—takes anywhere from 20-30 minutes. Set it aside after it's cool.
02 - Set your oven to 350°F (175°C). Coat a 9x5 pan with butter or grease so it doesn't stick.
03 - Toss the brown sugar and softened butter into a bowl. Whip it up with a mixer until it’s nice and fluffy. Add the vanilla and egg, then beat again until it all blends together.
04 - Throw the dry ingredients into the bowl, along with the cooled cider. Stir everything gently by hand until it’s just mixed. Don’t overdo it.
05 - Pour the mix into your greased pan. Toss it in the oven for about 50 minutes, or until a toothpick comes out clean when you check it.
06 - Leave the bread to sit in the pan for 15 minutes. Then pop it onto a rack set up over a pan to cool down completely.
07 - Brush the warm bread everywhere with melted butter. Mix cinnamon and sugar together, then shower it over the bread. Let the extra sugar fall onto the pan below.
08 - Let the bread fully cool—at least an hour. Slice it up and dig in!

# Notes:

01 - Boiling the cider packs in the apple flavor. Don’t skip it if you really want to taste the apples.
02 - The buttery coating combined with the cinnamon sugar gives the loaf a crackly surface, just like a crumbly donut.
03 - If you’re out of cider, apple juice works too. Just know it’ll make the loaf a bit sweeter.
