Bright Berry Quinoa Citrus (Print Version)

# Ingredients:

→ Citrus Honey Dressing

01 - 1 teaspoon finely chopped basil
02 - 1 teaspoon finely chopped mint
03 - 1 tablespoon honey
04 - 1 tablespoon fresh lime juice
05 - 2 tablespoons fresh lemon juice
06 - 4 tablespoons fresh orange juice
07 - 1 teaspoon orange zest

→ Salad

08 - 1 tablespoon finely chopped basil
09 - 1 tablespoon finely chopped mint
10 - 1 cup roughly chopped almonds or candied pecans
11 - 1 cup blueberries
12 - 1 cup blackberries
13 - 1 cup raspberries
14 - 1.5 cups strawberries, halved
15 - 2 cups cooked quinoa

# Instructions:

01 - Pour the citrus honey dressing across the top of the salad mix. Give it a soft toss so everything gets a little taste. Go ahead and enjoy right away.
02 - Take a big bowl and add the cooked quinoa, blueberries, blackberries, raspberries, strawberries, nuts, basil, and mint. Mix gently so things aren’t squished and everything is spread all around.
03 - Grab a small jar or bowl. Whisk together basil, mint, honey, lime juice, lemon juice, orange juice, and orange zest until it all looks blended. Put it aside for later.

# Notes:

01 - Make sure your quinoa’s totally cool before you toss it with the fruit. If you mix it warm, your berries might get mushy. This one’s super tasty if you eat it just after making it.
