Spinach Artichoke Chicken (Print Version)

# Ingredients:

01 - 1/4 cup artichoke hearts, chopped and drained
02 - 1/2 cup cottage cheese
03 - Salt and pepper to taste
04 - 2 cloves of garlic, finely chopped
05 - 2 chicken breasts, large
06 - 1/4 cup freshly grated Parmesan
07 - 1/2 cup fresh spinach, chopped
08 - 1/4 cup olive oil

# Instructions:

01 - Heat your oven to 400°F (200°C). While you wait, chop the chicken breasts into bite-sized chunks, about an inch each, and toss them in a big bowl.
02 - In the same bowl as the chicken, toss in the cottage cheese, Parmesan, spinach, garlic, and artichoke hearts. Mix it all up until it's blended nicely.
03 - Drizzle olive oil over the bottom of your 9×13-inch pan to coat it. Then, transfer the chicken mixture into the pan and spread it out evenly.
04 - Pop the dish into the heated oven and bake uncovered for 25 to 30 minutes. Make sure the chicken is fully cooked and hits a safe internal temp.
05 - Take it out of the oven when done and dish it out while it's still warm. Add more spinach on top if you'd like to fancy it up.
