Set your oven to 400ºF (200ºC) and position the rack in the center.

Slice off the ends of the Brussels sprouts, then cut each one vertically into halves.

Coat a rimmed baking tray lightly with oil. For easier cleanup, you can use parchment paper, but some browning may be limited.

Use paper towels to get your sprouts really dry. Put them in a big bowl and toss them with garlic, Parmesan, oil, salt, pepper, and Italian herbs until everything’s coated evenly.

Spread the Brussels sprouts on the prepared tray, cut side facing down in a single layer.

Bake the sprouts for around 25–30 minutes in the heated oven. Make sure they’re golden and adjust timing if needed depending on your oven.

Move the roasted sprouts to a serving dish and throw on some fresh parsley if you like. Enjoy right away!
