Crispy gnocchi with spinach (Print Version)

# Ingredients:

01 - 1 pound sausage, sliced into 1-inch chunks (like smoked turkey sausage)
02 - 1 pound gnocchi
03 - 2 tablespoons olive oil
04 - 2 tablespoons butter
05 - 2 teaspoons salt
06 - ¼ cup grated parmesan cheese
07 - 1 ½ cups baby spinach
08 - 5 cups water

→ Seasonings

09 - Salt and pepper as you like
10 - ¼ teaspoon garlic powder
11 - ½ teaspoon dried oregano
12 - ½ teaspoon dried basil
13 - ½ to 1 ½ teaspoons crushed red pepper, based on how spicy you want it

# Instructions:

01 - Start by boiling 5 cups of water with 2 teaspoons of salt. Once it’s bubbling, toss in the gnocchi. Cook for 1-2 minutes, or until the pieces float to the top. Drain them and leave them for now.
02 - In a pan over medium heat, warm up olive oil and butter. Add the gnocchi and sausage slices. Let one side turn golden before flipping them to brown the other side.
03 - Toss the spinach into the pan and stir gently until it softens. Sprinkle over oregano, basil, garlic powder, crushed red pepper, and 2 tablespoons of parmesan. Add a bit of salt and pepper too, depending on your taste.
04 - Plate the gnocchi mixture and top it off with the rest of the parmesan. You can enjoy it on its own or pair it with a salad and some bread.

# Notes:

01 - Don’t let the gnocchi stay in boiling water too long. They’ll keep cooking when pan-fried.
02 - To make it veggie-friendly, swap out the sausage for vegetarian sausage or add extra vegetables like bell peppers, mushrooms, or zucchini.
03 - This dish is great for meal prep and keeps fresh for about 5 days in the fridge.
04 - Homemade gnocchi can be frozen in a single layer on a tray. Thaw before boiling when ready to cook.
