Lightly coat a 9×13-inch dish with grease. Spread out the croissant chunks across the bottom.

Scatter the crumbled sausage over the croissant pieces. Follow it up with an even layer of shredded cheese.

In a big mixing bowl, beat the eggs with the milk, mustard powder, salt, and pepper. Mix thoroughly until smooth.

Pour the egg blend over the croissant, sausage, and cheese layers. Press everything down a bit to soak the bread in the mixture.

Cover the dish with some plastic wrap and let it chill in the fridge for at least 2 hours or overnight.

Turn the oven to 350°F (175°C). Take the dish out of the fridge and leave it at room temp while the oven preheats. Bake uncovered for 40-45 minutes, or until golden on top with a firm custard.
