Crispy Bang Bang Salmon Bites (Print Version)

# Ingredients:

→ Salmon Bites

01 - 0.5 g black pepper, freshly ground, add as much as you want
02 - 1 g salt, sprinkle to your taste
03 - 450 g salmon fillet, chop into little pieces

→ Coating

04 - 60 g panko breadcrumbs
05 - 2 large eggs, whip 'em up
06 - 60 g cornstarch

→ Bang Bang Sauce

07 - 5 ml honey
08 - 30 ml sweet chili sauce
09 - 120 g mayonnaise
10 - 15 ml sriracha, put in less or more, your call

# Instructions:

01 - Coat the salmon bites in your bang bang sauce while they're fresh out the oven or fryer. Grab some right away and dig in.
02 - Dump mayo, sweet chili sauce, honey, and sriracha in a bowl. Mix everything up till it's all smooth.
03 - Stick your covered salmon pieces onto a tray lined with parchment. Bake for 12 to 15 minutes at 200°C or until you see a golden crunch. Or fry them in hot oil till they're crispy all over.
04 - Toss the salmon cubes in cornstarch first, dunk in beaten eggs next, finish by rolling in panko so they get a good coat.
05 - Dry off your salmon cubes, then season with salt and pepper.
06 - Crank the oven up to 200°C. If you're frying, start heating oil in a deep pan instead.

# Notes:

01 - Adjust the heat by adding more or less sriracha as you like.
02 - Oil should be crazy hot if you're frying. That way you get a solid crunch and your bites won't get all greasy.
