01 - 2 ½ cups dates, finely chopped
02 - 1 ½ cups brewed hot coffee or espresso
03 - 1 ½ teaspoons baking soda
04 - 1 teaspoon ground cinnamon
05 - ⅛ teaspoon ground nutmeg
06 - 1 ¾ cups all-purpose flour
07 - ¼ teaspoon fine salt
08 - ¾ cup packed light brown sugar
09 - ½ cup granulated white sugar
10 - ½ cup unsalted butter
11 - 1 tablespoon pure vanilla extract
12 - 1 large egg
13 - 1 cup toasted walnuts, roughly chopped

14 - ½ teaspoon espresso powder
15 - 2 tablespoons boiling water
16 - 3 tablespoons butter, melted
17 - 2 cups powdered sugar
18 - 1 teaspoon vanilla extract
19 - ½ cup toasted walnuts, chopped (optional)

# Instructions:

01 - In a big bowl, stir together the dates, hot coffee or espresso, and baking soda, then leave it to sit.
02 - Mix up the flour, salt, cinnamon, and nutmeg in a smaller bowl.
03 - With a mixer, whip the butter and both sugars together until the mixture gets fluffy and light.
04 - Blend in the egg and vanilla extract to the whipped mixture until it’s smooth.
05 - Separate the dates from their liquid by straining. Gradually alternate adding the strained liquid and flour mixture to the butter mix, starting and ending with the liquid. Scrape down the sides and mix until smooth.
06 - Gently fold the reserved dates and toasted walnuts into the batter until evenly distributed.
07 - Coat a 9x5-inch loaf pan with baking spray or butter. Line it with parchment paper and coat the paper too.
08 - Pour the batter in the pan and bake it at 350°F for about 55-65 minutes. A toothpick poked near the center should come out clean when ready.
09 - Let the cake sit in the pan for 20 minutes before taking it out. Peel the parchment off, then move it to a rack to completely cool.
10 - Dissolve the espresso powder in hot water. In a bowl, whisk the espresso mixture with powdered sugar, vanilla, and melted butter. Add a bit more hot water if it’s too thick.
11 - Drizzle the glaze on the cooled cake and sprinkle walnuts on top if you’re using them. Let it set before cutting.
