Rinse the octopus well under cold water. Make sure you remove any leftover sand or ink from the inside of the body.

On the stovetop, simmer the octopus in water with some salt for about half an hour. You’ll know it’s done when your fork slides in easily.

Stir together lemon juice, olive oil, garlic, black pepper, and a bit of salt. Coat the cooked octopus in this mix and store it in the fridge for a couple of hours or overnight.

Heat your grill or grill pan as high as it can go before cooking.

Grill the marinated octopus for around 3 to 4 minutes on each side until it's slightly crispy and charred. Don’t let it go too long or it’ll get chewy.
