Easter Whoopie Pies (Print Version)

# Ingredients:

→ Cookie Base

01 - 1/2 cup cooking oil
02 - 2 large eggs
03 - 13.25 oz box mix for white cake
04 - Decorative Easter toppings

→ Creamy Center

05 - 1 cup of vanilla-flavored frosting
06 - A couple of drops of pink food dye

# Instructions:

01 - Set your oven to 350°F and let it warm up.
02 - Put some parchment paper on top of a baking sheet.
03 - In a mixing bowl (or stand mixer), combine the cake mix, eggs, and oil until dough forms.
04 - Grab a cookie scoop, create dough portions, and place them on the sheet.
05 - Sprinkle Easter decorations on top, gently pressing to stick them to the dough.
06 - Pop the tray in the oven for around 10 minutes. Cool a bit when done, then move to a rack to fully cool.
07 - Blend the frosting with a few drops of food dye in a small bowl until it turns pink all over.
08 - Fill your frosting into a piping bag and snip the end.
09 - Pipe the frosting onto half the cookies, then sandwich them by placing a second cookie on top. Press gently.

# Notes:

01 - Don’t start building the cookies until they’ve cooled all the way, or the filling might melt.
02 - Switch up the food dye color to match your holiday or theme.
03 - Keep the finished cookies in an airtight box, and they’ll be good for up to 3 days.
