Easy Baked Chicken Tzatziki (Print Version)

# Ingredients:

01 - 1 ½ cups chicken broth with reduced sodium
02 - 1 teaspoon onion powder
03 - ½ teaspoon ground paprika
04 - ½ cup fresh parsley or chopped dill for topping
05 - 1 medium cucumber, thinly sliced (optional garnish)
06 - 1 cup store-bought or homemade tzatziki sauce
07 - 1 ½ pounds chicken breasts, boneless and skinless, cut into small chunks
08 - 1 cup uncooked long-grain white rice
09 - ½ cup crumbled feta cheese
10 - 1 teaspoon powdered garlic
11 - 1 teaspoon dried oregano leaves

# Instructions:

01 - Turn the oven to 375°F (190°C). Grab a 9×13-inch baking pan and grease it lightly to prevent sticking.
02 - Sprinkle the rice evenly across your greased pan. Add the chicken broth, making sure all the rice is nicely covered so it cooks evenly.
03 - Place the chicken chunks on top of the rice. Season chicken evenly using garlic powder, onion powder, paprika, and oregano to bring that Mediterranean vibe.
04 - Gently coat the chicken with tzatziki sauce using a spoon. This will keep the chicken juicy while adding a zesty, creamy touch.
05 - Cover the pan snugly with foil, then bake for 35-40 minutes. Check that the chicken is fully cooked and the rice is soft. If it looks too liquidy, bake a bit longer without the foil for 5-10 minutes.
06 - Take out the pan and let it cool a few minutes. Sprinkle on crumbled feta, fresh dill or parsley, and cucumber slices for a refreshing crunch.
