Easter Poke Cake (Print Version)

# Ingredients:

→ Base Layer

01 - 1 package of white cake mix (plus the extras it calls for, like eggs, oil, and water)

→ Colorful Gelatin Layers

02 - 1 small packet (3 oz) of strawberry-flavored gelatin (you can use pastel options like lemon, lime, or blue)
03 - 1 small packet (3 oz) of lime-flavored gelatin (or another pastel shade for contrast)
04 - 2 cups of hot water, divided (1 cup for each gelatin mix)

→ Topping and Decoration

05 - 8 oz tub of whipped topping (store-bought like Cool Whip, or homemade)
06 - 1 cup of shredded coconut with added sweetness (optional)
07 - A few drops of food coloring in soft hues like pink, green, yellow, or blue (optional)
08 - Decorative goodies like mini eggs or pastel sprinkles

# Instructions:

01 - Turn on your oven to 350°F (175°C). Use some grease or cooking spray on a 9×13-inch pan.
02 - Prepare the batter by following whatever steps are on the cake mix package. Stir in the eggs, oil, and water as instructed.
03 - Pour the mixture into the pan and bake as directed in the box's instructions. It usually takes around 25-30 minutes. Use a toothpick to test if it's done—poke it in, and if it comes out clean, you're good!
04 - After baking, leave the cake in the dish and let it sit for roughly 15 minutes so it cools a bit.
05 - Grab a wooden spoon handle or a fork and poke holes evenly throughout the cake. Keep about 1 inch between each hole.
06 - In two separate bowls, mix each flavor of gelatin with 1 cup of boiling water. Stir until it's dissolved completely.
07 - Carefully drizzle the gelatin mixtures across the cake. Alternate colors to give a nice marble-like pattern.
08 - Cover the cake and pop it in the fridge for at least a couple of hours so the gelatin sets properly.
09 - Spread out the whipped topping evenly across the top of the chilled cake.
10 - If you'd like to use coconut, add a few drops of food coloring to it and toss to color. Sprinkle over the cake.
11 - Finish by adding mini chocolate eggs, sprinkles, or any other festive topping you like.
