Lay the sliced avocado in a bowl, sprinkle on the lime juice, hit it with salt and pepper, and gently toss it around so every piece gets coated and stays nice and green.

Toss your cooked rice, chopped cilantro, salt, and lime juice in a bowl together. Give it all a good mix.

Get your grill or skillet hot on medium-high. Sear the marinated chicken, flipping once, for about 6–7 minutes per side until it hits 75°C inside and looks white all the way through. Give it a break off the heat for a bit, then slice it.
