Easy Honey Avocado Chicken (Print Version)

# Ingredients:

→ Chicken

01 - Salt and fresh black pepper, as much as you like
02 - 2 garlic cloves, super finely chopped
03 - 5 ml lime zest, use a grater to get it nice and fine
04 - 30 ml fresh lime juice
05 - 60 ml honey
06 - 450 g chicken breast, boneless and skinless

→ Cilantro Lime Rice

07 - Salt (just a dash or to your taste)
08 - 15 ml lime juice
09 - 15 g cilantro, chopped up
10 - 200 g rice, cooked (white or brown, your pick)

→ Avocado Layer

11 - Salt and fresh black pepper, for flavor
12 - 15 ml lime juice
13 - 2 avocados, ripe and thinly cut

# Instructions:

01 - Dig in right away so you get all those fresh flavors and fun textures at their best.
02 - Start with a mound of cilantro-lime rice on each plate, then pile on the juicy chicken slices and finally add the avocado on top. Splash on any extra honey-lime mix you’ve got left.
03 - Lay the sliced avocado in a bowl, sprinkle on the lime juice, hit it with salt and pepper, and gently toss it around so every piece gets coated and stays nice and green.
04 - Toss your cooked rice, chopped cilantro, salt, and lime juice in a bowl together. Give it all a good mix.
05 - Get your grill or skillet hot on medium-high. Sear the marinated chicken, flipping once, for about 6–7 minutes per side until it hits 75°C inside and looks white all the way through. Give it a break off the heat for a bit, then slice it.
06 - Dump honey, lime juice, zest, chopped garlic, a bit of salt, and pepper into a bowl and mix them together. Toss the chicken in, make sure everything's covered. Cover it up and let it chill out for 15 minutes or more.
