Effortless Shrimp Queso Skillet (Print Version)

# Ingredients:

→ Shrimp Fajitas

01 - 3 tablespoons taco seasoning
02 - 450 grams (1 pound) shrimp, shelled, thawed, deveined
03 - 1 cup mushrooms, sliced
04 - 1 cup red onion, thin slices
05 - 1.5 cups mixed bell peppers, cut into strips
06 - 2 tablespoons olive oil

→ Queso Sauce

07 - 60 grams (1/2 cup) white American cheese, shredded
08 - 180 grams (1.5 cups) pepper jack cheese, shredded
09 - 57 grams (2 ounces) cream cheese, let it soften before using
10 - 60 millilitres (1/4 cup) heavy cream, add more if you want it runnier

# Instructions:

01 - Toss the shrimp and veggies back into the skillet, swirl them all around in the gooey queso. Get them good and coated, then dish it up right away.
02 - Drop in a handful of shredded pepper jack and white American cheese at a time, stirring as you go so it melts nice and smooth. Want the sauce thinner? Splash in some more heavy cream till it's just right.
03 - Turn the heat to low on your pan. Add the cream cheese and pour in heavy cream, mixing the whole time until the sauce is silky, not chunky.
04 - Sprinkle the taco seasoning over the shrimp in the pan, then toss everything so it's covered. Let shrimp sear for a couple minutes, then take the shrimp and veggies out and place aside.
05 - Grab a big skillet, pour in olive oil, and warm it on medium. Toss in mushrooms, red onion, and bell peppers. Stir them around and let them cook till they're soft, about 5 or 6 minutes.

# Notes:

01 - Out of taco seasoning? Just mix up a blend with chili powder, paprika, cumin, onion and garlic powders, oregano, plus some salt and pepper—makeshift works great.
