Radish Salad with Feta Dill (Print Version)

# Ingredients:

→ Dressing

01 - 1/2 cup extra virgin olive oil
02 - 2 teaspoons Dijon mustard
03 - Salt, to taste
04 - Freshly ground black pepper, to taste
05 - 1 tablespoon red wine vinegar
06 - 1/4 cup freshly squeezed lemon juice (about one big lemon)
07 - 1 large garlic clove, chopped really fine

→ Finish

08 - 1/2 cup feta cheese, broken up into bits

→ Vegetables and Fresh Herbs

09 - 1/2 cup fresh dill, finely chopped
10 - 1 small red onion, cut in half and sliced thin
11 - 3 cups red radishes, ends off and sliced thin

# Instructions:

01 - Scoop everything into a serving dish and stir in the crumbled feta. Eat right away so it stays nice and crisp.
02 - Drench the veggie mix with your dressing. Gently give it all a stir, making sure every bit gets coated.
03 - Toss your thin-sliced radishes, chopped dill, and onion into a big mixing bowl.
04 - Grab a small bowl. Stir together the lemon juice, vinegar, mustard, and chopped garlic. Slowly whisk in the olive oil till it looks creamy. Sprinkle in salt and pepper however you like.

# Notes:

01 - Using a block of feta and crumbling it right before eating gives better texture. Wait until the last minute to toss the veggies with dressing so nothing gets soggy. If dill’s not your thing, mint works too.
