Heat up water and sugar in a pot over medium heat. Stir till the sugar dissolves completely. Set aside to cool down.

Toss the prepared kiwi pieces into a blender and blend till they're nice and smooth.

For a silky finish, pass the kiwi blend through a fine strainer to catch the seeds.

Mix the cooled syrup with the strained kiwi puree and fresh lemon juice. Chill in the fridge for about 2 hours.

Pour everything into an ice cream maker and churn as per the directions. No ice cream maker? Use a wide container, freeze, and stir every half hour till it firms up.

Enjoy the soft sorbet straight away or store it in a sealed container in the freezer until it's set.
