Garlic Grilled BBQ Prawns (Print Version)

# Ingredients:

→ Main Ingredients

01 - 8 jumbo prawns with shells on, deveined
02 - Juice and grated peel from 1 lemon
03 - 2–3 fresh chillies, sliced into thin strips
04 - A couple of garlic cloves, finely grated
05 - 2g of chopped parsley, about a tablespoon
06 - 1/3 cup of olive oil
07 - Season with a pinch of salt and pepper

08 - Crunchy bread for soaking up the sauce
09 - Lemon wedges for extra tang at the table

→ For the Barbecue

10 - A lighter or matches
11 - Charcoal
12 - Fire-starting cubes
13 - A cup of water in case flames get too wild

# Instructions:

01 - Put fire-starting pieces on the bottom rack inside your BBQ. Light those first, then stack your coals on top, focusing the heat in one spot in the middle.
02 - Warm up olive oil in a pan at medium heat. Toss in the grated garlic and sliced chillies. Cook for a couple of minutes. Add the lemon juice and zest, letting it simmer briefly, just until the garlic loses its harsh bite. Don’t let it brown.
03 - Drizzle half the garlicky sauce over the prawns. Rub the sauce both inside and around the shells to make sure the flavor gets everywhere.
04 - Check the coals—they should be all white and ashy with no black patches. Put a clean rack over them for grilling.
05 - Lay the prawns on the hot grill. Turn them after 45–60 seconds per side, or until the shells turn orange and the flesh turns pearly white. Splash water on any big flames.
06 - Move your grilled prawns to a clean platter. Spoon the leftover garlic-lemon-chilli sauce on top. Serve right away with the bread and lemon wedges, if you like.
