Goat Cheese Fig Rolls (Print Version)

# Ingredients:

01 - ½ cup fig jam
02 - 2 tbsp light brown sugar
03 - 1 large egg
04 - 4-5 sprigs fresh thyme leaves
05 - 4 oz crumbled goat cheese
06 - 1 sheet of puff pastry, thawed (13.2 oz)

# Instructions:

01 - Roll out the thawed puff pastry onto a sheet of parchment paper. Spread the fig jam on top, keeping an inch of border around the edges clean.
02 - Sprinkle goat cheese over the fig jam. Add the brown sugar and thyme evenly across the surface.
03 - Carefully roll the pastry into a log shape, keeping it firm. Wrap it in parchment paper and freeze for 20 minutes to firm up.
04 - While the roll chills, set your oven to 400°F (200°C) to preheat.
05 - Take the dough out of the freezer and unwrap it. Use a sharp knife to slice ½-inch pieces, wiping the blade between cuts if needed.
06 - Lay the pinwheels on a baking sheet covered with parchment paper, leaving some space between them.
07 - Beat the egg in a small bowl, then lightly brush it over the top of each pastry using a pastry brush.
08 - Pop the pinwheels into the oven and bake for 15-20 minutes, or until they’re crisp and golden brown.
09 - Sprinkle more thyme and brown sugar on top if you like. Serve warm and dig in!
