Roll out the thawed puff pastry onto a sheet of parchment paper. Spread the fig jam on top, keeping an inch of border around the edges clean.

Sprinkle goat cheese over the fig jam. Add the brown sugar and thyme evenly across the surface.

Carefully roll the pastry into a log shape, keeping it firm. Wrap it in parchment paper and freeze for 20 minutes to firm up.

While the roll chills, set your oven to 400°F (200°C) to preheat.

Take the dough out of the freezer and unwrap it. Use a sharp knife to slice ½-inch pieces, wiping the blade between cuts if needed.

Lay the pinwheels on a baking sheet covered with parchment paper, leaving some space between them.

Beat the egg in a small bowl, then lightly brush it over the top of each pastry using a pastry brush.

Pop the pinwheels into the oven and bake for 15-20 minutes, or until they’re crisp and golden brown.

Sprinkle more thyme and brown sugar on top if you like. Serve warm and dig in!
