Toss everything into a bowl—start with the turkey, then add parsley, smoked paprika, onion powder, garlic powder, black pepper, salt, mustard, and finally the mayo. Give it a good mix till it looks pretty even.

Wet your hands just a little. Scoop up the mix and press it into four patties, kinda thick—about 1.25 cm each.

Pour olive oil into a big pan. Let it get hot but don’t let it smoke—just a nice shimmer is good.

Carefully set patties in the pan. Let them sizzle for about 5 minutes, then flip and do the same on the other side. You want a nice golden outside and make sure they're cooked all the way through.

Once the burgers are done, move them out of the pan right away. Eat them hot and throw on whatever fixings or sides you like.
