Greek Sheet Pan Chicken (Print Version)

# Ingredients:

→ Marinade

01 - 1 lemon, squeezed (around 3 tablespoons)
02 - ½ teaspoon freshly cracked black pepper
03 - 2 teaspoons oregano, dried
04 - 4 garlic cloves, finely chopped
05 - 1 teaspoon Dijon mustard
06 - 1 teaspoon thyme, dried
07 - 1 teaspoon kosher salt
08 - ½ cup olive oil

→ Main Ingredients

09 - 1 pint cherry or grape tomatoes
10 - ½ cup kalamata olives (pits removed)
11 - ¼ cup feta crumbles
12 - 1 yellow bell pepper, cut into 1-inch chunks
13 - 6 bone-in, skin-on chicken thighs
14 - ½ red onion, cut into thin wedges
15 - 2 tablespoons parsley, freshly chopped
16 - 1 medium zucchini, sliced lengthwise, then chopped into half-moons

# Instructions:

01 - Turn your oven on to 425°F (220°C). Mix together oil, lemon juice, garlic, oregano, thyme, Dijon mustard, salt, and pepper in a small bowl until blended smoothly.
02 - In a mixing bowl, add the chicken thighs, then pour most of the marinade (about ⅔ of it) over them. Use your hands to toss the chicken and coat every piece. Let rest for about 10-15 minutes.
03 - On a sturdy sheet pan, spread out the zucchini, red onion wedges, chunks of bell pepper, and cherry tomatoes. Pour the remaining marinade over everything, then stir them around to coat all sides.
04 - Place the chicken thighs in between the veggies on the pan. Put it into the oven and let bake for 30 minutes.
05 - Pull the sheet pan from the oven. Sprinkle olives and feta cheese over everything, then slide it back in. Cook for 10-15 more minutes or until the chicken hits 165°F inside, and the veggies are soft.
06 - Before serving, sprinkle parsley generously over the chicken and vegetables.

# Notes:

01 - Oven times aren’t always exact. Adjust the rack or broiler to get a little extra color if you want.
02 - The juice pooling on the pan is totally normal—it’s the veggies and chicken releasing liquids. You can spoon it over side dishes if you’d like.
03 - Using chicken breasts instead? Add them to the pan for the last 25 minutes so they don't dry out.
