Turn your oven on to 400°F (200°C) and let it heat up.

Peel the beets and carefully slice them thin, but don't cut all the way through. Stick some chopsticks on either side to guide your cuts.

Put your beets on a tray, coat them with olive oil, and sprinkle some salt and pepper.

Pop the sheet in the hot oven and bake for about 50-60 minutes. You want them soft inside and crispy around the edges.

While the beets are baking, grab a small bowl and stir together yogurt, dill, lemon juice, honey, and garlic until smooth.

Take the cooked beets out and let them cool just a bit. Add the dill dressing over the top and dig in.
