Hasselback Beets Dressing (Print Version)

# Ingredients:

01 - 4 medium beets
02 - Salt and pepper, as much as you like
03 - 2 tbsp olive oil

→ Dill Dressing

04 - 1/2 cup plain Greek yogurt
05 - 1/4 cup dill, finely chopped
06 - 1 minced garlic clove
07 - 1 tbsp honey
08 - 1 tbsp lemon juice

# Instructions:

01 - Turn your oven on to 400°F (200°C) and let it heat up.
02 - Peel the beets and carefully slice them thin, but don't cut all the way through. Stick some chopsticks on either side to guide your cuts.
03 - Put your beets on a tray, coat them with olive oil, and sprinkle some salt and pepper.
04 - Pop the sheet in the hot oven and bake for about 50-60 minutes. You want them soft inside and crispy around the edges.
05 - While the beets are baking, grab a small bowl and stir together yogurt, dill, lemon juice, honey, and garlic until smooth.
06 - Take the cooked beets out and let them cool just a bit. Add the dill dressing over the top and dig in.

# Notes:

01 - Sour cream can replace yogurt for a sharper taste, or smash up some avocado to make it vegan.
02 - Sprinkle on red pepper flakes for a kick, or toss in mint or parsley for extra freshness.
03 - A splash of apple cider vinegar gives the dressing a tangy edge.
