Turn on the oven and set it to 200°C (400°F). Wipe the mushrooms gently using a damp towel to remove dirt, then trim the ends of the stems while keeping most of them intact.

Take a bowl and mix olive oil, soy sauce, honey, vinegar, and garlic. Add a sprinkle of salt and black pepper, and give it a quick stir until combined.

Place the mushrooms into a big bowl. Pour the prepared sauce over them. Mix everything carefully so the mushrooms are all coated well.

Get a baking sheet covered with foil or parchment paper. Spread the mushrooms over it in one even layer, leaving a bit of space between each one.

Put the tray in the oven and let the mushrooms roast for 20 minutes. Stir them once at the halfway mark to make sure they cook evenly and the glaze thickens and sticks.

Once the mushrooms are golden and soft, pull them out of the oven. Move them to a serving dish, drizzle any remaining sauce on top, and sprinkle parsley if you'd like.
