Pop the tray in the oven and roast for 25-30 minutes, keeping an eye out until the pieces are golden and tender.

As the cauliflower roasts, grab a small pan and whisk together the lemon juice, maple syrup, cornstarch, and black pepper over low to medium heat.

Keep stirring the mixture until it thickens into a shiny glaze, which should take about 3-5 minutes.
