Set your oven to 350°F (175°C). Put the stick of butter into a 9×9 baking pan. While the oven warms up, let the butter melt inside for roughly 3-4 minutes.

Combine dry ingredients in a big bowl: sugar, baking powder, flour, and salt. Add in the buttermilk, vanilla, and lemon extract (if you're using it). Stir it all together until it’s smooth and easy to pour.

Pour the batter evenly over the hot melted butter in your pan. Don’t mix it together; leave it as-is so the layers stay separate.

Scoop your lemon curd or pie filling on top of the batter, spacing it around evenly. Don’t worry if it sinks—it’s supposed to during baking and creates that custardy texture.

Bake for around 45-55 minutes. Look for golden edges, and poke with a toothpick in the center—it should come out clean or with just a few moist crumbs.

Give it about 10-15 minutes to rest. This lets the filling settle a little before you serve it up.

Cut into chunks and share while warm. If you like, top it with whipped cream, ice cream, powdered sugar, or even fresh lemon slices.
