Put potato chunks in salted, boiling water. Cook for 15-20 minutes until soft. Drain, then mash them smooth.

Mix water, sugar, sticky rice flour, and mashed potatoes in a bowl. Stir everything until it turns into a stretchy dough.

Roll the dough and split it into small, equal sections. Shape each one into a ball.

Warm up oil in a frying pan on medium heat. Flatten each ball gently, then fry in batches. Cook until they're golden on both sides, roughly 3-4 minutes per side.

Take the cooked mochi out and let them sit on paper towels to soak up any extra oil.

Pour some soy sauce over the mochi and add sesame seeds or green onions, if you'd like.
