Heat your oven to 375°F (190°C) and line a baking pan with parchment.

Combine eggs, milk, cream, salt, and pepper in a bowl and whisk until smooth.

Add bacon, diced onion, shredded cheese, and chives into the egg base and stir well.

Place the bagel halves (cut side facing upwards) on the baking tray.

Scoop the egg mixture onto each bagel half, making sure to fill the center and coat the surface evenly.

Pop the tray into the oven and bake for 20–25 minutes, or until the eggs are cooked and the tops are golden.

Take them out of the oven, let them cool down slightly, and serve warm alongside ketchup for dipping.
