Quiche Stuffed Bagels (Print Version)

01 - 1/2 cup milk
02 - 1/4 cup fresh chives, minced
03 - 6 large eggs
04 - 1 cup shredded cheese (cheddar or Swiss)
05 - 4 plain bagels, halved
06 - Salt, as needed
07 - 1/2 cup red onion, diced finely
08 - Pepper, as needed
09 - 1 cup crispy bacon, crumbled
10 - 1/2 cup heavy cream

11 - Dipping ketchup

# Instructions:

01 - Heat your oven to 375°F (190°C) and line a baking pan with parchment.
02 - Combine eggs, milk, cream, salt, and pepper in a bowl and whisk until smooth.
03 - Add bacon, diced onion, shredded cheese, and chives into the egg base and stir well.
04 - Place the bagel halves (cut side facing upwards) on the baking tray.
05 - Scoop the egg mixture onto each bagel half, making sure to fill the center and coat the surface evenly.
06 - Pop the tray into the oven and bake for 20–25 minutes, or until the eggs are cooked and the tops are golden.
07 - Take them out of the oven, let them cool down slightly, and serve warm alongside ketchup for dipping.

# Notes:

01 - Using bagels that are a day old is better since they'll hold up better when loaded with the egg mixture.
