02 - 1/4 teaspoon cayenne powder
03 - 1 teaspoon coriander powder
04 - 1/2 teaspoon turmeric
05 - 1/2 teaspoon cinnamon
06 - 1 tablespoon olive oil
07 - 1 teaspoon paprika
08 - 1/2 teaspoon ground ginger
09 - 1 tablespoon fresh lemon juice
10 - Salt and pepper for seasoning
11 - 1 tablespoon cumin

→ Garlic Sauce Section

12 - 2 garlic cloves, finely chopped
13 - 1 tablespoon fresh lemon juice
14 - 1/2 teaspoon cumin spice
15 - 1 cup of plain Greek yogurt
16 - Salt and pepper as needed
17 - A sprinkle of fresh parsley for topping

# Instructions:

01 - In a big mixing bowl, toss the chicken with cumin, coriander, turmeric, paprika, ginger, cayenne, cinnamon, oil, lemon juice, salt, and pepper. Stir well so it’s all coated. Cover it and pop it in the fridge for 30 minutes to a whole day.
02 - Crank up the grill to medium-high heat. Lay the chicken on the grill and cook for 4-5 minutes per side until juices run clear and there’s a nice char on top.
03 - Stir together yogurt, garlic, cumin, lemon juice, salt, and pepper in a small dish. Mix it up until creamy and smooth.
04 - Slice the grilled chicken into thin strips. Serve it right away alongside the garlic sauce, and scatter a bit of parsley for a fresh touch.

# Notes:

01 - Add more time for marinating to deepen the flavor.
02 - Thread the chicken onto skewers to make it closer to classic shawarma style.
03 - Pair with warm pita, onion slices, lettuce, and tomato for a complete plate.
04 - Tweak garlic levels in the sauce to match your taste.
