Soft Carrot Bread (Print Version)

# Ingredients:

→ Liquid Additions

01 - 1 big egg
02 - ½ cup packed light brown sugar
03 - ¼ cup plain granulated sugar
04 - ¼ cup sour cream (swap with lite or Greek yogurt if needed)
05 - ⅓ cup coconut oil (or use canola or vegetable oil instead)
06 - 2 teaspoons vanilla extract

→ Dry and Spices

07 - 2 teaspoons cinnamon powder
08 - ½ teaspoon nutmeg, ground
09 - ½ teaspoon baking soda
10 - Pinch of salt (if desired)
11 - ½ teaspoon baking powder
12 - 1 cup regular all-purpose flour

→ Extras

13 - ¾ cup freshly grated carrots (around 1 large peeled carrot)
14 - ¾ cup grated apple (medium-sized Fuji, Gala, Honeycrisp, or similar, leave the peel)

# Instructions:

01 - Heat your oven to 350°F (175°C). Coat a 9×5-inch loaf pan with floured spray, or rub some grease and dust it with flour. Set the pan aside for now.
02 - In a big bowl, combine the egg, brown sugar, coconut oil, granulated sugar, sour cream, vanilla, cinnamon, and nutmeg. Whisk everything together until smooth.
03 - Add flour, baking soda, baking powder, and salt (optional) to the bowl with the wet mixture. Slowly stir or fold gently—you don’t want to overdo it.
04 - Toss in the carrots and apples to the batter. Fold them in lightly until combined.
05 - Pour the batter, which will be thick, into the pan you set aside earlier. Smooth the top a little with a spatula if needed.
06 - Pop it in the oven for 45–52 minutes. The top should turn golden, the middle should set, and a toothpick poked into the center should come out mostly clean with just a crumb or two. If it’s browning fast around the edges, throw some foil over the pan after 35 minutes.
07 - Leave the loaf to cool in the pan for roughly 15 minutes. Then pull it out and let it finish cooling on a wire rack before you slice it up and enjoy.

# Notes:

01 - A foil tent can stop the crust from getting too dark while the center finishes cooking properly.
02 - Pair a slice with honey-flavored butter, cinnamon sugar butter, or drizzle on a vanilla bean brown butter glaze to up the flavor.
