Sun-dried Tomato Pasta (Print Version)

# Ingredients:

→ Base ingredients

01 - 2 cups chicken broth or stock (bone broth is a great protein boost)
02 - 3 large garlic cloves, finely chopped
03 - 3 tablespoons unsalted butter
04 - ½ cup whole milk or half and half, at room temp
05 - 8 oz of angel hair pasta
06 - 1 small jar (8 oz) sun-dried tomatoes in oil, drained
07 - ⅓ cup parmesan cheese, shredded
08 - 2 tablespoons softened cream cheese (use it if you want extra creaminess)

→ Seasonings

09 - ½ teaspoon black pepper, freshly cracked
10 - ¼ teaspoon salt
11 - ½ teaspoon red chili flakes (optional kick)
12 - 1 teaspoon of dried Italian herb mix

# Instructions:

01 - Melt the butter in a big skillet over medium-low heat. Toss in the minced garlic and cook it for about 60 seconds until it smells wonderful, but make sure it doesn't brown.
02 - Stir in the chicken broth and add all the spices along with the sun-dried tomatoes. Gently pour in the milk or half and half while stirring it together. Heat it until the mixture starts to bubble slightly.
03 - Place the angel hair pasta into the pan. Let it rest for about half a minute to soften and sink into the liquid, then carefully press it down without cracking the strands.
04 - Leave the pasta to cook in the bubbling liquid for 5 minutes. Lower the heat, and if you're using cream cheese, drop it in now to let it blend in. Keep cooking until the pasta has some bite left (al dente).
05 - Scatter the parmesan over the top and stir to mix. Take a taste and tweak the salt or pepper. If things look a little thick, just splash in more broth or milk to loosen it up.
06 - Scoop out the pasta while it's still steamy. Add some extra parmesan or freshly chopped herbs on top if you'd like and enjoy!

# Notes:

01 - Warm it up again easily! Just mix in a touch of broth or milk before popping it in the microwave to get that creaminess back.
02 - Feel free to switch out angel hair for spaghetti or bucatini. You'll need to cook it a bit longer to get to al dente.
03 - For a meat-free option, swap vegetable broth in place of the chicken stock.
