Cut the rind off the Brie wheels, then chop into cubes. Let them sit out until they soften to room temperature.

Toss the Brie pieces into a food processor. Blend for about 5 minutes, pausing to scrape the sides now and then, until it’s silky smooth. Scoop the fluffy Brie into a serving bowl.

Drizzle honey all over your whipped Brie and add honeycomb if you'd like. Garnish with rosemary sprigs for a nice touch, or swap the honey for blueberry jam and thyme for a fresh twist. Surround with crackers or crostini for dipping.
