Honey Walnut Shrimp (Print Version)

# Ingredients:

01 - 1/4 cup Japanese-style mayo.
02 - 2/3 cup cornstarch for coating.
03 - 4 large egg whites, beaten lightly.
04 - 1 lb peeled jumbo shrimp.
05 - 1 cup vegetable oil for frying.
06 - 1 tbsp freshly squeezed lemon juice.
07 - 3 tbsp sweetened condensed milk.
08 - 2 tbsp runny honey.
09 - 1/4 tsp freshly ground black pepper.
10 - 1/4 tsp fine salt.
11 - 3 tbsp granulated sugar.
12 - 1 tbsp cold water.
13 - 1/2 cup walnut halves, toasted.
14 - Green onions, chopped for finishing.

# Instructions:

01 - Stir together the mayo, condensed milk, lemon, and honey until smooth.
02 - Simmer sugar with water. Once syrup thickens, stir in walnuts and spread them on parchment to cool.
03 - Season shrimp with salt and pepper. Whip egg whites until frothy, then blend in cornstarch. Dip shrimp to coat.
04 - Bring the oil to 350–375°F. Fry shrimp in small groups for 2 to 3 minutes until they’re crispy and golden.
05 - Combine the fried shrimp with the prepared sauce and candied walnuts. Sprinkle with green onions to serve.

# Notes:

01 - It's fine to use regular mayo if you don't have the Japanese kind.
02 - Frying smaller batches gives better results.
03 - Work quickly when handling the candied walnuts.
