Pad See Ew Noodles (Print Version)

# Ingredients:

01 - 2 tsp sugar.
02 - 2 cloves of garlic.
03 - 1 1/2 tbsp oyster sauce.
04 - 4 stems of Chinese broccoli.
05 - 3 tbsp cooking oil.
06 - 1 tbsp light soy sauce.
07 - 2 tsp dark soy sauce.
08 - 150g sliced chicken thighs.
09 - 200g flat rice noodles.
10 - 2 tsp white vinegar.
11 - 1 large egg.

# Instructions:

01 - Chop broccoli. Boil noodles until tender. Stir together all sauce components.
02 - Fry garlic, toss in chicken, and cook through. Add broccoli stems first, then leaves, and scramble the egg. Take it all out of the pan.
03 - Make sure the wok's really hot. Toss noodles and sauce lightly, letting the edges brown slightly.
04 - Return the chicken mix to the pan, give it a quick toss, and dish it up right away.

# Notes:

01 - To get juicy chicken, cook it on its own first.
02 - Keep the wok super hot for the noodles.
03 - Swap in another protein if you'd like.
