Mini Sweet Treats (Print Version)

# Ingredients:

01 - 1/2 cup softened butter (113g).
02 - 1/2 cup granulated sugar (115g).
03 - 1/2 cup confectioners' sugar (60g).
04 - 1/2 cup oil (108g).
05 - 1 1/4 teaspoons vanilla extract.
06 - 1/4 teaspoon almond extract.
07 - 1 large egg.
08 - 2 1/3 cups all-purpose flour (291g).
09 - 3/4 teaspoon baking soda.
10 - 3/4 teaspoon cream of tartar.
11 - 1/2 teaspoon salt.
12 - 3/4 cup rolling sugar (173g).

# Instructions:

01 - Turn on the oven to 350°F and prepare baking sheets with parchment paper.
02 - Cream the butter and both sugars. Add the oil, egg, and extracts, and mix it all together.
03 - Stir together the flour, baking soda, cream of tartar, and salt. Gradually combine this with the wet mix.
04 - Measure out 2-teaspoon scoops, coat them in sugar, and press them flat with a glass.
05 - Bake for 9-12 minutes until the edges look firm. Dust with sugar while still warm.

01 - The dough feels soft because of the oil.
02 - Let baking trays cool if reusing.
03 - Makes around 90 bite-sized cookies.
