Turkey Sweet Potato Bake (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil
02 - 1 pound ground turkey
03 - 1 medium onion, chopped into small pieces
04 - 2 garlic cloves, finely chopped
05 - 2 sweet potatoes, medium-sized, peeled and cut into cubes
06 - 2 zucchinis, medium, diced into chunks
07 - 1 teaspoon Italian seasoning
08 - 1 teaspoon smoked paprika
09 - A pinch of salt and pepper, or to your preference
10 - 1 cup grated cheese (cheddar or mozzarella works well)
11 - Optional: Fresh parsley for decoration

# Instructions:

01 - Turn your oven on to 400°F (200°C). Coat a big baking dish lightly with olive oil.
02 - Pour olive oil into a wide skillet and heat it on medium. Toss in the onions and garlic, and cook them together for about 3-4 minutes until the onion looks soft and clear.
03 - Add the ground turkey into the skillet. Break it apart as it cooks evenly, which should take around 5-7 minutes. If any grease collects, remove it.
04 - Throw in diced zucchini and sweet potatoes, along with paprika, Italian seasoning, salt, and pepper. Stir everything together and cook until the vegetables start to soften, another 5-7 minutes.
05 - Pour the turkey and veggie mix into the greased baking dish, spreading it out evenly across the bottom.
06 - Scatter the shredded cheese generously over the top of the turkey and veggie layer.
07 - Slide the dish into your hot oven and bake for 25-30 minutes. You’ll know it’s done when the sweet potatoes are soft and the cheese is melted and golden.
08 - Take the dish out of the oven and let it sit for a few minutes. Sprinkle some parsley on top if you want, then serve it up.
