Turn your oven on to 400°F (200°C). Coat a big baking dish lightly with olive oil.

Pour olive oil into a wide skillet and heat it on medium. Toss in the onions and garlic, and cook them together for about 3-4 minutes until the onion looks soft and clear.

Add the ground turkey into the skillet. Break it apart as it cooks evenly, which should take around 5-7 minutes. If any grease collects, remove it.

Throw in diced zucchini and sweet potatoes, along with paprika, Italian seasoning, salt, and pepper. Stir everything together and cook until the vegetables start to soften, another 5-7 minutes.

Pour the turkey and veggie mix into the greased baking dish, spreading it out evenly across the bottom.

Scatter the shredded cheese generously over the top of the turkey and veggie layer.

Slide the dish into your hot oven and bake for 25-30 minutes. You’ll know it’s done when the sweet potatoes are soft and the cheese is melted and golden.

Take the dish out of the oven and let it sit for a few minutes. Sprinkle some parsley on top if you want, then serve it up.
