Zesty Cod Coconut Lemon (Print Version)

# Ingredients:

→ Cod

01 - Cod fillets, 600 grams
02 - A sprinkle of salt
03 - Cracked black pepper, as needed

→ Cream Sauce

04 - 2 tbsp olive oil
05 - 1 medium onion, sliced thin
06 - 1 tbsp freshly grated ginger
07 - 2 garlic cloves, minced
08 - 1 can (300ml) coconut milk
09 - Zest and juice from a large organic lemon

# Instructions:

01 - Set your oven to 180°C (or 350°F) so it’s ready when needed.
02 - Sprinkle salt and black pepper over the cod fillets to your liking.
03 - Pour 2 tbsp olive oil into a big skillet over medium heat. Toss in the onion slices and cook until soft. Then, mix in the grated ginger and minced garlic, giving it about a minute to cook. Slowly add the coconut milk, letting it simmer lightly. Lastly, stir in the lemon juice and zest.
04 - Lay the fish down flat in a baking dish. Pour the lemony coconut sauce over the cod, making sure it’s fully coated. Place it in the oven and bake for around 20-25 minutes, until the fish can be flaked with a fork.
05 - Take the cod out of the oven and serve with the sauce spooned on top. Add some veggies or rice on the side to make a balanced plate.
