Set your oven to 180°C (or 350°F) so it’s ready when needed.

Sprinkle salt and black pepper over the cod fillets to your liking.

Pour 2 tbsp olive oil into a big skillet over medium heat. Toss in the onion slices and cook until soft. Then, mix in the grated ginger and minced garlic, giving it about a minute to cook. Slowly add the coconut milk, letting it simmer lightly. Lastly, stir in the lemon juice and zest.

Lay the fish down flat in a baking dish. Pour the lemony coconut sauce over the cod, making sure it’s fully coated. Place it in the oven and bake for around 20-25 minutes, until the fish can be flaked with a fork.

Take the cod out of the oven and serve with the sauce spooned on top. Add some veggies or rice on the side to make a balanced plate.
