Ground Beef Zucchini Sweet Potato (Print Version)

# Ingredients:

→ Main Components

01 - 2 medium zucchinis, chopped
02 - 450 grams ground beef
03 - 1 large sweet potato, diced and peeled
04 - 2 garlic cloves, minced
05 - 1 small onion, chopped fine

→ Seasonings

06 - 1 teaspoon dried oregano
07 - A sprinkle of salt
08 - Some ground black pepper
09 - 1 teaspoon smoked paprika

→ Cooking Fats and Garnish

10 - Chopped fresh parsley for topping
11 - 2 tablespoons olive oil

# Instructions:

01 - Top with chopped parsley and serve while it's steaming hot. Take the pan off the burner first.
02 - Toss in diced zucchini last. Leave the lid off and cook for 5 minutes so the pieces turn soft but still have a bite.
03 - Add the sweet potato cubes. Season everything with black pepper, smoked paprika, oregano, and salt. Put the lid on and cook about 10 minutes. Stir once in a while and stop once the potato's fork-tender.
04 - Put in your ground beef and break it up as you go. Give it 5 to 7 minutes to lose all that pink. You can pour off extra fat if you want.
05 - Drizzle olive oil in a big skillet on medium heat. Toss in the onion and garlic. Sauté for a couple minutes till they smell delicious and soften up.

# Notes:

01 - Give it a squeeze of lemon juice or a quick shake of chili flakes for more zip.
02 - Tastes best fresh, but leftovers can chill in the fridge and warm up easy.
03 - Toss it with crunchy bread or grab a refreshing salad on the side.
